PRODUCT INTRODUCTION

Stachyose is a natural exsiting tetrasaccharide whose structure consists of two galactose, one glucose and one fructose.It is a non-reducing functional oligosaccharide. Stachyose is not decomposed by human gastrointestinal digestive fluid, it belongs to soluble dietary fiber. It is a white powder, with a refreshing taste and no peculiar smell, it is a common food.

Physical Properties

● 22% of the sweetness of sucrose.

● It is easily soluble in water, with a solubility of 130g (20 ° C), which is different from organic solvents such as ether and ethanol.Moisturizing and hygroscopicity are lower than sucrose, but higher than high fructose syrup.

● The osmotic pressure is similar with sucrose.

● Stachyose isn’t reductive.

● It can be added to liquid foods, such as lactic acid beverages, vinegar beverages, beer and other beverages, to develop new functional foods,the added amount is small, the effect is remarkable, and the flavor of the original food will not be damaged. Added to baked goods, it retains moisture and changes the rheological properties of dough.

Regulatory license

In 2010, the former Ministry of Health of our country issued the No. 17 Announcement, allow to produce and operate of stachyose as a common food. According to the results of food safety toxicology evaluation (including acute toxicity test, genotoxicity test and sub-chronic toxicity test), stachyose was determined “Actually non-toxic” and safe to eat.
