PRODUCT INTRODUCTION
Crystalline fructose is a monosaccharide product obtained by isomerization, separation, refining and crystallization process of glucose from starch hydrolysis products.It is isomer of glucose with sweetness of 1.2 ~ 1.8 times that of sucrose. It naturally exists in the pulp of fruits, honey and grains. Crystalline fructose is a fruit flavored, low calorie, low GI food.
Physical Properties
● It is low calories and can be digested and absorbed by the intestines. It is the source of nutrition for the human body.
● High moisture retention, low water activity
● Contains aldehyde groups, Maillard reaction can occur to color baked goods.
● Freezing point reduction capacity.
● Not easy to crystallize.
● Cooperate with other sugars or sweeteners to to enhance flavor
As an important nutritional sweetener, crystalline fructose has been widely used in functional foods, nutritional health foods, cold drinks, low calorific value foods and sports drinks.
